Only a few places in the world can lay claim to having ungrafted vines- usually places more isolated where phylloxera never hit. The soil here is shallow, gravelly clay over fractured limestone bedrock. Canta la Perdiz has a softer structure than Peñas Aladas, so it requires less time in barrel (30 months) and displays a flamboyant aromatic and floral aspect that distinguishes it from the other sites.
