Most of the wines in this style are mainly based in Gamay and produced using sulfur. Marcel Perinet is the owner and winemaker at La Dentelle, a change of gears after 41 years as director of the 3 Michelin starred restaurant Georges Blanc. He is a precise and thoughtful winemaker who has elevated the potential of the region, choosing to use mostly Poulsard grapes from 100 year old vines, 80%, with the balance from 40 year old Gamay vines. High quality base material plus clean and exacting temperature controlled vinification results in a drier style of Bugey, with a restrained and refreshing amount of sweetness. This is always dry and bottled with zero dosage, it offers a pure expression of terroir, resulting in an elegant and nuanced sparkling wine with a creamy texture and long finish.
