This noble wine ideally wants to age 7-8 yrs, so decant and drink it out of a wide Burgundy stem if drinking soon. 9.6g/L RS, 12.5% ABV. Ellergrub is a grand cru site of exceptionally old (80-100 yrs) vines in blue slate soils.. As always a spontaneous fermentation, and aged in used barrique and small oak casks for 10 months. A lovely, unmistakable salinity to this wine, so very characterful.
