While there are a bunch of agaves that are referred to as Coyote, this particular one from Chichicapam is a cross of Karwinskii (think the various cuixes) and Potatorum (tobala) and has only recently been officially certified as a variety. It produces a distinctly fresh and fruity (some might even say rooty tooty) and immediately accessible style of mezcal. If you've ever uttered the phrase "I don't like mezcal because it’s too smoky" this may be what changes your mind as this bottle is full of fresh, bright fruit, herbs, and flowers. If mezcal could be described as tasting somewhere between a strawberry daquiri and a gin and tonic, it would be this, but like in a delicious and classy way. Not that I didn’t feel classy when I mixed a strawberry daquiri and a gin and tonic together once, but I was also wearing a top hat at the time and what’s classier than looking like a cross between Slash and Mr. Peanut?
