These selections highlight the structural potential of Mediterranean varieties when grown in specific, high-mineral environments—ranging from the ancient red clays of Australia to the limestone-heavy hills of the Marche.
The Wines:
Chalmers, 2021 Vermentino, Heathcote (Australia) The Chalmers family has been the primary steward for the importation and propagation of Italian varieties in Australia. Their Heathcote vineyard is defined by its deep, iron-rich Cambrian soils, which provide a distinct mineral framework for Vermentino. The 2021 was fermented in stainless steel to maintain a linear and precise architecture. It offers a profile of Meyer lemon and green apple, underpinned by a sharp, sea-spray salinity. The palate is bone-dry and driven by a persistent acidity, offering a technical and refreshed expression of the variety.

La Staffa, "Mai Sentito!", Marche (Italy) Riccardo Baldi produces this rifermentato in bottiglia from Verdicchio grown in the chalky, limestone-dense soils of Staffolo. Unlike many ancestral method sparklers, "Mai Sentito!" prioritizes clarity and crystalline fruit. The wine undergoes its secondary fermentation in the bottle without disgorgement, resulting in a vibrant, lightly sparkling white. It balances the natural weight of Verdicchio with a bracing saline finish and a characteristic note of almond pith. It is a focused, high-tension wine that remains deeply rooted in the traditions of the Marche.
