Yves Canarelli, a driving force in Corsican biodynamics, partnered with sommelier Patrick Fioramonti to establish the Tarra di Sognu estate by reviving a historic, abandoned vineyard on the limestone plateau of Bonifacio. This specific terroir provides a stark geological contrast to the island's predominantly granitic and schist soils. During the hot, dry summer of the 2016 vintage, the porous limestone bedrock retained essential deep-water reserves, allowing the estate's blend of indigenous varieties—including Carcaghjolu Biancu, Riminese, and Vermentinu—to achieve concentrated phenolic ripeness while preserving crucial natural acidity.
The nose opens with precise aromas of crushed oyster shell, lemon pith, and native coastal herbs. On the palate, the wine is linear and distinctly saline, anchored by a chalky texture and a firm, driving acid backbone. This pronounced minerality and structural tension finish clean and focused, providing an ideal pairing for raw bivalves, whole grilled white fish, and fresh goat cheeses.
