The Preuses climat, with its optimal south-to-southwest exposure, features shallow Kimmeridgian limestone and clay soils rich in marine fossils, which impart a distinctive structural tension. Dauvissat employs whole cluster pressing, indigenous yeast fermentation mostly in stainless steel, and extended aging in neutral oak to foster depth while preserving its inherent mineral purity. The challenging 2016 vintage, characterized by early frosts and hail followed by a propitious late season, yielded a Chablis with a fresher profile, chiseled acidity, and overt minerality.
