2018 Vodopivec, Carso, Solo MM Vitovska

Paolo Vodopivec’s Solo MM is sourced from a single, high-density 1.3-hectare parcel of pure limestone, reflecting his uncompromising focus on the indigenous Vitovska variety. The grapes undergo extended skin-contact maceration and spontaneous fermentation in buried Georgian amphorae, followed by 18 months of maturation in large Slavonian oak botti. This technical rigor translates the austere, rocky Carso terroir into a wine defined by its architectural, mineral-driven tension rather than mere fruit expression. The 2018 vintage conditions provided sufficient warmth to achieve physiological ripeness, resulting in a structural profile that balances a fine-grained, phenolic grip with sustained, saline acidity. The final wine is bottled without fining or filtration, ensuring a direct and unmediated transmission of the site’s limestone essence.
