Fabrice Pouillon’s 'Les Terres Froides' (The Cold Lands) is a testament to his precise, biodynamic farming in the Montagne de Reims. Sourced from a north-facing, chalky parcel in the Premier Cru of Tauxières-Mutry, the vines sit in a cool microclimate that allows for a long, slow ripening period. The 2019 vintage provided a fascinating contrast: the heat of the summer gave the fruit profound concentration, while the cool nights of this specific terroir maintained electric acidity. Winemaking includes eight months in neutral oak and enamel followed by extended bottle age. The result is a laser-focused Blanc de Blancs—compact, linear, and vibrating with tension.
