Eric Morgat’s work in Savennières is centered on the technical restoration of high-density parcels along the appellation’s rugged volcanic slopes. Managed under strict biodynamic principles, the Fidès bottling is a study of the region’s diverse volcanic geology, drawing from a mosaic of schist, rhyolite, and spilite soils. These stony foundations, including portions from the esteemed Roche aux Moines, dictate a wine of significant structural grip rather than simple varietal aromatics.

The 2021 vintage, marked by its cooler profile, has produced a Chenin Blanc of remarkable verticality. Following nearly two years of aging in neutral demi-muids and stoneware jars, the wine shows a disciplined mid-palate density that is immediately countered by an electric, high-toned acidity. On the palate, it is lean and savory, possessing a fine-grained phenolic texture and a persistent, stone-inflected finish. This is a taut, intellectually demanding bottle that avoids the broadness often found in the region, focusing instead on structural tension and geological transparency.
