Bobal is one of Spain's most undervalued grapes — planted across the high plateau of Manchuela for centuries, mostly forgotten by the outside world, and quietly producing some of the most exciting red wine in the country. Finca Sandoval under Javi Revert is leading the charge to change that.
El Fundamentalista — the name says it all. This is Bobal stripped back to its bones: 80-year-old vines in Ledaña, organic farming, limestone soils at 1,000 meters. The altitude is everything here — keeping temperatures honest, acidity alive, and the wine from ever tipping into the sun-baked heaviness that defines so much Spanish red at this price point.
Forty percent whole clusters, indigenous yeast fermentation, ten months in clay tinajas rather than oak. The tinajas are the key — an ancient vessel that adds texture without flavor, letting the limestone and the old vines do the talking. The result is medium-bodied and mineral, with chalky tannins, real tension, and a rugged, earthy finish that feels genuinely wild and alive.
