I Custodi is a key player in Mount Etna's exciting modern wine revival, crafting compelling wines from the active volcano's slopes. Founder Mario Paoluzi collaborates with Etna expert enologist, Salvo Foti to cultivate ancient vines on volcanic terraces. This is 100% Carricante, the island’s most complex and sophisticated white variety. Savory and citrus fruit with a nice dose of minerality thanks to the rich volcanic soils. A versatile wine that is great on its own but textured enough to be great with food. Named “Aedes” from the Latin word for “home” or “family” to highlight a sense of warmth and belonging. This is one of our go to white Etna’s and an incredibly complex wine for the money.
