David Trousselle is a rising star in the Hautes-Côtes, farming his vineyards organically (ECOCERT certified) to capture the true voice of the land. His En Cré Pinot Noir is sourced from a stunning, high-altitude site in Baubigny, tucked in a valley between Saint-Aubin and Saint-Romain. The 2023 vintage was generous yet balanced, allowing Trousselle to achieve perfect ripeness without losing tension. He treats the fruit with a light hand—using native yeasts, gentle extraction (15–20 days), and minimal new wood. The wine is a textbook example of high-elevation Burgundy: it offers a core of ripe fruit supported by a firm structural backbone and electric acidity. It is a vivid expression of this unique, protected terroir.
