2023 Domaine Paul Pillot, Chassagne-Montrachet Premier Cru, Clos Saint-Jean Rouge

Thierry Pillot is the driving force here, using organic farming (though uncertified) to get the best out of the vines. This red comes from the Clos Saint-Jean vineyard, where the deep red clay and limestone soils naturally make the Pinot Noir dense and chewy. Thierry ferments with 50% whole clusters (stems included) to add spicy complexity, and he keeps the new oak low (15%) so you taste the fruit, not the barrel. Even though 2023 was warm, this wine is surprisingly fresh and high-acid. It has a solid core of ripe fruit but finishes with a firm, snappy structure.
