Pierre Morey, a steadfast proponent of biodynamic viticulture since 1997, cultivates his Côte d'Or parcels with a profound focus on soil vitality and vine resilience, ensuring a direct expression of their unique sites. Following hand-harvesting, the Chardonnay undergoes gentle pressing and a prolonged élevage, typically 12-24 months, in oak barrels, allowing for a natural progression of fermentation and structural development. The 2023 vintage in Burgundy experienced overall warmth, yet a comparatively cool and less luminous summer preserved crucial acidity before a late August/early September heatwave concentrated ripeness. This yields a Bourgogne Chardonnay characterized by a ripe, supple mid-palate, framed by a surprisingly firm, bright acidity underpinned by tartaric acid, offering both energy and a discernible saline tension.
