Cyril Testut manages his 13-hectare estate with a commitment to hand-harvesting and manual sorting to maintain the integrity of fruit from 50 to 60-year-old massale selection vines. This cuvée undergoes slow, low-temperature fermentation followed by 16 months of aging on fine lees in stainless steel, a technical regimen designed to preserve the transparency of its origin. The parcels are situated on steep Kimmeridgian limestone slopes within a prestigious corridor between Grand Cru Blanchots and 1er Cru Montée de Tonnerre, a geographic position that dictates the wine’s inherent mineral energy.
In the generous 2023 vintage, the deep root systems of the old vines successfully buffered late-season warmth, yielding a wine with significant mid-palate density and sappy dry extract. The architectural frame is defined by a fine-grained texture and a persistent saline nerve that provides necessary tension against the vintage's natural amplitude. The final result is a wine of exceptional clarity and persistence, reflecting the focused, "stony" character of Chablis’ most revered right-bank slopes.
