Domaine de Chassorney is now directed by Aurélien Verdet, who assumed full control of the 10.48-hectare estate from natural wine pioneer Frédéric Cossard in 2022. This Auxey-Duresses Blanc is sourced from 40-year-old Chardonnay vines grown on the clay-limestone soils of the Les Crais vineyard, where farming is ECOCERT-certified organic and performed entirely without machinery.
Vinification occurs via indigenous yeasts, with both primary and malolactic fermentation taking place in concrete eggs. The wine ages in the same concrete vessels for nine months. It is fined using casein and bentonite clay, and bottled unfiltered. Verdet introduces a minimal sulfur addition during aging and prior to bottling—a slight deviation from Cossard's methods that yields a more classic, stable structural profile. The low-yielding 2024 vintage concentrated the crop, producing a dense, linear wine anchored by green apple, lemon zest, and chalky minerality.
