Domaine Le Novi is a family estate located in the village of La Tour d’Aigues in the Luberon, where the current proprietor, Romain Dol, represents the fifth generation of his family to work the land. The vineyards are planted exclusively on soft sandstone soils known as "safres," which, combined with the estate's significant diurnal temperature shifts, provide a distinct environment for the grapes used. This wine is made from a blend of Vermentino, Bourboulenc, and Ugni Blanc, offering a fresh profile defined by notes of citrus, white fruits, and a mineral-driven finish with a light texture. The 2024 vintage in the region was marked by a mild spring and cool, windy conditions during harvest, resulting in an aromatic, balanced wine with preserved acidity.
