2024 I Custodi, Aedes, Etna Bianco

Mario Paoluzi and consultant Salvo Foti focus I Custodi’s Aedes on the rigorous organic management of high-density *alberello* bush vines within the north-slope Contrada Moganazzi. Rooted in sandy volcanic soils at 700 meters elevation, the fruit undergoes temperature-controlled fermentation and six months of maturation in stainless steel to prioritize varietal transparency and mineral-driven linearity. Technical precision is maintained by naturally inhibiting malolactic fermentation, ensuring the wine’s low pH and vibrant acid structure remain the primary architectural focus. Despite the dry conditions of the 2024 vintage, the high-altitude site and an earlier harvest preserved essential tension while contributing a denser mid-palate and increased phenolic ripeness. The final profile is one of significant structural nerve, defined by a saline-flecked verticality and a persistent, chiseled finish.
