2025 Ermes Pavese, Blanc de Morgex et de La Salle

Ermes Pavese operates out of the alpine village of La Ruine in the Valle d'Aosta, where the estate has produced wine since 1999. The vineyards sit at extreme altitudes between 900 and 1,200 meters above sea level on steep slopes of granite-derived mountain sand. Fermented in stainless-steel vats and kept on the lees with malolactic fermentation allowed, the wine exhibits delicate floral aromas, hints of mountain herbs, and a refreshing palate balanced by notes of pears and white pepper. The cool alpine climate and high-altitude conditions shape a crisp, linear structure defined by high natural acidity and distinct mineral drive.
