His "Mignon Method" focuses on meticulous vineyard work in the deep clay and chalky Tuffeaux soils, ideally suited to Pinot Meunier. The ADN de Meunier Brut Nature, rooted in the 2020 harvest, is a pure expression of this variety, vinified parcel-by-parcel in stainless steel with ambient yeasts and no malolactic fermentation to preserve site-specific character.
