Sourced from granite-arena soils in the Taravo valley, this parcel is managed under strict biodynamic certification, utilizing holistic ecosystem practices to ensure physiological ripeness within a challenging maritime climate. The winemaking is precise and reductive; whole-cluster pressed fruit undergoes alcoholic fermentation in Stockinger barrels, with malolactic fermentation intentionally blocked to preserve the variety’s inherent tension. The 2021 vintage provided the structural framework for this cuvée, yielding a wine defined by its saline drive, precise acid nerve, and a dense, mid-palate concentration that bypasses broad ripeness in favor of structural clarity and intensity.
