In the foothills of the French Alps you’ll find one of France’s tiniest appellations for producing wine : Bugey Cerdon. Here only one style of wine is produced : Methode Ancestrale Rose Demi-Sec, a mouthful of a name for a wine that is like a refreshing strawberry soda. Most of the wines in this style are mainly based in Gamay and produced using sulfur. Marcel Perinet is the owner and winemaker at La Dentelle, a change of gears after 41 years as director of the 3 Michelin starred restaurant Georges Blanc. He is a precise and thoughtful winemaker who has elevated the potential of the region, choosing to use mostly Poulsard grapes from 100 year old vines, 80%, with the balance from 40 year old Gamay vines. High quality base material plus clean and exacting temperature controlled vinification results in a drier style of Bugey, with a restrained and refreshing amount of sweetness. Perinet also works naturally, with all native yeast ferments and no added sulfur.
