Domaine de Marzilly (Ullens), Champagne, Lot 10 Brut

Maxime Ullens established Domaine de Marzilly in the Massif de Saint-Thierry with an agricultural philosophy rooted in organic viticulture and a focus on terroir expression. Grapes undergo fermentation with indigenous yeasts in 205L oak barrels crafted from estate trees, followed by extended aging of 36 months on lees in bottle to build complexity and integration. Situated in the northernmost reaches of Champagne near Hermonville, the vineyards are characterized by sandy soils, providing a distinct minerality and preserving freshness. The Lot 10 Brut, a blend of 80% Pinot Meunier and 20% Chardonnay, showcases a vinous, structured profile with ample chalkiness, precise acidity, and underlying tension, finished as an Extra Brut at 2. 8 g/L.
