Stéphane Tissot's Crémant du Jura Indigène is a distinctive sparkling wine made with native yeasts for both fermentations – not something you see very often and demonstrates his commitment to making something as true to its terroir as possible. It is made from a blend of organically/biodynamically farmed Chardonnay, Pinot Noir, Poulsard, and Trousseau. The unique way he makes this wine and the incredible fruit that goes into it coupled with long extended lees aging, creates a complex, dry, and vibrant Crémant (sparkling wine designation given to wines made outside of Champagne) with fine bubbles, ripe citrus and orchard fruit, subtle brioche and nutty notes, and a characteristic Jura, savory minerality. This is always dry and bottled with zero dosage, it offers a pure expression of terroir, resulting in an elegant and nuanced sparkling wine with a creamy texture and long finish. This can go toe to toe with Champagne and offers a ton of value at a price that falls at the lowest end of quality Champagne wines these days.
