Eduardo Torres Acosta, a Canary Islands native and former enologist at Passopisciaro, manages several high-altitude parcels on Etna’s north face using organic viticulture to steward old-vine field blends. These dry-farmed vineyards, situated between 550 and 850 meters on sandy volcanic ash, benefit from the cooler microclimate and delayed ripening inherent to the *Versante Nord*. The 2022 bottling is primarily Nerello Mascalese fermented spontaneously in concrete with 10% whole clusters, followed by 16 months of aging in neutral Slavonian oak and cement to prioritize structural transparency. While the 2022 vintage was marked by early-season drought, timely late-summer rainfall ensured physiological ripeness while preserving the high-toned acidity and mineral tension typical of these volcanic soils. The resulting wine exhibits a dense yet lean mid-palate and a fine-grained tannic framework, reflecting a deliberate focus on structural poise and site-specific clarity.
