Jean Foillard’s ‘Eponym’ is sourced exclusively from Les Charmes, the highest-altitude lieu-dit in Morgon, where 50-year-old Gamay vines are anchored in a complex substrate of schist, granite, and manganese. Following the rigorous standards of the estate, the fruit is harvested late and subjected to a traditional three-to-four-week whole-cluster fermentation without added sulfur or filtration. The cool 2021 growing season imparted a distinct structural profile to this cuvée, emphasizing bright, persistent acidity and fine-grained tannins that contrast with the more dense, opulent expressions of the region. Elevage in neutral Burgundy barrels refines this architectural tension, resulting in a wine that balances internal energy and palpable mineral drive.
