Their approach prioritizes dry-farming and organic viticulture, working with indigenous varieties to express the unique, limestone-heavy soils of the region. The 2019 vintage provided a stable growing season, allowing for slow physiological maturation and the retention of essential acidity in the face of a Mediterranean climate. This structural management results in a wine with defined mineral tension, fine-grained tannins, and a precise, mid-palate density that reflects the site’s rugged mountain origin.
