Olivier Collin's Ulysse Collin champions a terroir-first approach, meticulously farming his Congy vineyards with organic principles to foster profound soil health and low yields. The Les Enfers Blanc de Blancs Extra Brut originates from a 0.63-hectare parcel in the Coteaux du Petit Morin, distinguished by its eastern exposure and shallow red clay and silex topsoil over Campanian chalk bedrock with black flint. Fermented with natural yeasts in used Burgundian barrels and undergoing extended sur lattes aging, this 100% Chardonnay is bottled without fining or filtration. The resulting wine offers a concentrated and intensely mineral profile, structured by racy acidity and chalky extract that culminate in a long, saline finish.
