Ployez-Jacquemart is a family-owned Champagne house, now overseen by 3^rd generation winemaker Laurence. This is a classic blend of Chardonnay, Pinot Noir and Pinot Meunier, all certified organic. This cuvee pulls from Premier and Grand Cru fruit in the Montagne de Reims and Côte des Blancs, then spends extended time aging with some reserve wine added in, which gives it more depth than the average non-vintage Champagne. The house works in stainless steel and keeps dosage restrained, so the chalky backbone of those villages comes through cleanly. This is the kind of Champagne that drinks less like a simple aperitif and more like a serious house blend built on patience and cellar time.
