Flavien Nowack one of our favorite rising talents in Champagne, making some of the most serious Pinot Meunier wines in the zone. Domaine Nowack is based in the village of Vandieres, on the western edge of the Vallée de la Marne. Upon taking the reins at his family estate in 2011 he began to implement changes aimed at creating champagnes as naturally as possible. He farms organically, refuses to chapitalize his vin clair, and conducts his secondary fermentations with frozen grape must rather than sugar and yeast. As a result, his Champagnes have less pressure under cork and are more delicate and vinous than is typical in the region; not to mention that they are lip-smackingly delicious! La Fontinette is drawn from a single vineyard of 100% Pinot Meunier planted in 1965. Perched mid-slope on a parcel of sandy clay over a deep layer of marine sediment.
