This 100% Syrah comes from very old vines (originally planted in the 1870's) on sandy soil in the flats just east of the Cornas appellation. This drinks like a baby Cornas and is in fact vinified in the same manner as Gilles' Cornas; 30 days on skins in cement vats with 100% whole-cluster inclusion followed by 12 months in demi-muids. Perfect with burgers, it is dark fruited, feral but not too structured, with powerful minerality and an effortless quality to it. We like to drink Syrah with a chill on it, and suggest you serve this just above cellar temperature. Cellar temp is 55; serve at 60 - 62 F.
