Carricante is one of the greatest varieties indigenous to Sicily, rendering racy and age-worthy whites. The noblest vineyards for Carricante are on the Eastern slope of Mt. Etna in a region known as Milo. This is the only region that Etna Bianco Superiore is allowed to grow in. Even higher elevation than the Dafara Galluzo, this 800m elevation vineyard site renders dry, mineral, and exquisitely balanced wines. Look for mild fruity notes of ripe apple and orange blossom, with allusions to anise and almond, to accompany the marked salinity and welcoming texture. An excellent partner to fish of all stripes.
