COS is an iconic Sicilian winery based in the Vittoria region on the southern coast of the island. Founded in 1980 by three friends Giambattista Cilla, Giuto Occhipinti, and Cirino Strano, COS was pivotal in ushering in the modern era of Sicilian wine, constantly innovating along the way. They have been organic since day one, and adopted biodynamic practices in 2000. They were also pioneering in exploring amphora aging and skin-contact winemaking for white grapes, techniques they still employ today which have now become common practice the world over. Their Cerasuolo di Vittoria is a benchmark for the category, and an absolutely delicious bottle of wine. Nero d’Avola and Frappato are co-fermented in concrete with indigenous yeast and aged for one year in Slavonian oak botti before bottling, followed by a further year in bottle before release. While many Cerasuolo di Vittoria lean into the juicy, lifted character of Frappato, COS’ rendition always shows more depth, heft, and structure. Expect a dark-fruited wine with notes of blood orange and citrus that is medium bodied with understated tannins. A bit like being gripped by a velvet glove. Drink now or continue to hold for 5-10 years to allow further development.
