Pierre-Henri has radically reconfigured his family domain since taking the reins in 2010, striving to leave all barrels in the cellar unsulphured until their final phases of life--he systematically makes two different styles of wine; one sulphured, the other completely unsulphured. Unsulphured cuvees announce themselves with different, sideways labels, by comparison to the standard cuvees which have standard labels. This unsulphured Bourgogne 'Les Vaux' is sourced from Pinot Noir vines around the center of the village of Meursault, rendering a more voluminous, structured wine. Fruit is vinified entirely whole-cluster in stainless steel after making it past a series of sorting tables, before being racked into barrels on its lees where it finishes malo.
