When you want to explore distinctions in snow, you ask Eskimos. When you want to explore distinctions in lava, you ask Hawaiians and other inhabitants of active lava flow island systems. This type of lava, dubbed ‘aa’ by Hawaiians, presents as a sort of dark, sharply edged cocoa puff. Contrast this with different lava, pāhoehoe lava, which is denser with long sheets. This is a field blend of traditional varieties of the Azores growing in this lava, mostly Arinto dos Açores and Verdelho, along with other varieties. Again, from the skilled hands of Paulo Machado, head winemaker at Azores Wine Company. All fruit that does not enter the Arinto dos Acores or Verdehlo bottlings comprises this wine, and is fermented sur lie in large horizontal tanks. Stunning wine, one of the most interesting whites I've had in some time, and it costs nearly nothing. It's like a Savennieres and a bone-dry Mosel Riesling had a child. But it's a beach lava dry white. Pours a honeyed gold. So fresh and incisive, with a gorgeous clean mineral nose.
