The Lavantureux’s make some pretty killer Chablis. Kermit Lynch has imported them for years, and because they do not produce a lot, you rarely see them around. We’ve been working with them for the past 3 or 4 vintages with a lot of success. The style is very much built on tension and precision. Vau de Vey happens to be the very steepest site in all of Chablis. Very rocky site yielding piercing, dry, mineral wines. This is taught and saline and a perfect accompaniment to a plate of raw oysters on ice.
