Luca Roagna is one of the most important producers in Barolo and Barbaresco, a genuine celebrity in the world of Nebbiolo. He also makes a Langhe Chardonnay, one of the Langhe's great insider secrets, right alongside his cult Langhe Rosso.

But why Chardonnay in the Langhe at all? In the late 1980s, Luca's father, Alfredo, looked at his cooler, east-facing parcels, saw that Nebbiolo would never fully ripen there, and planted a grape that would thrive there instead. While Piedmont's other big names were chasing flashy styles of Chardonnay, the Roagnas set out to prove the Langhe could make a subtler, more refined approach, similar to Burgundy.

Sixty percent of the fruit comes from Rocche di Castiglione Falletto, Barolo, the rest from Barbaresco. Luca then does the unexpected: he blends in 5 percent direct-pressed Nebbiolo. That is what gives this wine its spine, its faint savory grip, and a texture unlike other Chardonnay.

When I was on the floor at Maialino, Danny Meyer's Roman trattoria, we bought every bottle the importer would let us have and poured it by the glass. It never lasted long.
