Genepy has become all the rage of late, becoming a real bartenders' favorite and a hip go-to. The herb itself only really grows in one place: the Alps. Difficult to find and resistant to cultivation, its alluring aroma, singular flavor and scarcity make it especially desired amongst those that know. January's rendition is made with small-farm genepy sourced from the Haute-Alps region, along with other domestic artemisia including wormwood, Sweet Annie, and mugwort, and a chunk of other botanicals like lemon verbena, hops and hyssop. The distillate is then lightly sweetened with local honey, colored with a natural tincture of herbs, and aged in used Sauternes barrels. Great on its own, in a Swampwater, or in the oft-forgotten Bijou.
