Gregoire began his wine career as a négociant, working for Maison Trénel (a large portfolio, purchased by Michel Chapoutier in 2015) before deciding he wanted to make his own wine from noble vineyard sites others might overlook. This is a blend of Gregoire’s sites, notably Les Roches, les Garants and la Roilette. No sulfur is added during vinification, just a tiny bit before bottling once malolactic fermentation has finished. This practicing organic wine is done entirely in concrete—it sees a 10-12 day maceration, then a cooler temperature vinification that’s never allowed to rise above 86F, and a final 7 months in concrete to age.
