One of the breweries followed with cult-like status, Niizawa is responsible for creating the “Super” line of sake, having developed the technology to slowly polish rice grains to even 7%, or removing 93% of the original grain – a process that takes more than a week for one ton!!
Hakurakusei denotes the top sakes of the house, this Junmai Daiginjo polished to 40% and incredibly refined while carrying the familiar lavish texture of many Miyagi sakes, owing in part to the Omachi rice. Aromatics range from dark floral hints to sweet white and citrus fruits.
