The Sierra de Gredos is a mountain region just outside of Madrid where madrileños like to buy vacation homes to quickly escape from the city. Unfortunately, this is at the expense of an old, abandoned winemaking tradition that only recently is coming to the forefront of the wine world—noble, fallow vineyard sites are regularly razed to make way for expensive housing. Ruben Diaz is a trailblazing winemaker who helped to build the reputation of the Sierra de Gredos to what it currently is: one of the most exciting regions in Spain. Born in Cerberos, a small municipality at the heart of the Gredos mountains west of Madrid, Ruben’s wine journey began in earnest in 1999 when an old-vine plot of his families’ vines was about to be torn out. He'd spent years learning from his family, as well as the elders in Cebreros, and from the other pioneers drawn to this unique region about the best means of capturing and elevating the unique terroir of the Gredos, and he's now widely regarded as one of the greatest producers. He relies on organic agriculture and non-interventionist wine making to allow individual parcels of very old vines to express themselves. Doré is a white wine made from Chasselas Doré, a grape more commonly known as a Swiss variety. It is generally believed to have been brought to the center of Spain by pilgrims along the Camino de Santiago. Vinified with a week of skin contact, Doré is a lovely introduction to macerated white wines with unctuous textures and bright, crisp acidity.
