Chateau Simone is synonymous with Palette, a unique microclimate within Provence where the Rougier family founded this great estate centuries ago. The estates vine's, some of which are over 100 years old, are planted on 20 hectares of limestone soil surrounded by wild pine forests and Mediterranean shrubland. The most unique wine at Simone and perhaps the calling card of the estate is their rosé; fermented and aged in a mix of foudres and concrete eggs for a minimum of 12 months this is much more than a summertime quaffer. Rich fruit is lent depth by flavors of earth and garrigue backed by zippy acidity and just a touch of tannin. The Palette Rosé from Chateau Simone always continues to improve for many years after it is released and is perhaps best when 5-10 years out.
